The Burgers

1.5 lbs Ground Chuck (80/20 lean-to-fat ratio is best)

4 slices Sharp White Cheddar or Gruyère cheese

4 Sesame seed brioche buns

Salt and black pepper to taste

Butter (for toasting the buns)

Instructions
1. Prepare the Patties

Form the beef into four even patties. Pro-tip: Press a small dimple into the center of each patty with your thumb; this prevents them from "doming" while cooking.

Season both sides generously with salt and pepper right before they hit the heat.
2. Sear and Melt

Heat a cast-iron skillet or grill to medium-high.

Cook the patties for 3–4 minutes per side for medium-rare.

During the last minute of cooking, place a thick slice of cheese on each patty. Cover the pan with a lid for 30 seconds to get that perfect melt seen in your photo.
3. Assemble

Butter and toast your sesame buns until golden brown.

Place the cheesy patty on the bottom bun.

Top with a massive spoonful of the warm bacon jam.
